Date Flapjack 'Granola'

Today's recipe doubles up as a great snack for children and adults alike or a granola like breakfast crumble. Add dried fruit or mashed banana for a different version. These flapjacks keep for a week in the fridge if you have any self restraint!
To make the date flapjacks:
150g of butter (vegan if desired) 250g of gluten free porridge oats (small flakes) 2-4 tbsp of date syrup or agave/honey/maple syrup 4-6 dates (or dried apricots/prunes/1/2 mashed banana) A pinch of salt
1. Preheat the oven to 160°C and butter an 8" x 8" brownie tin. 2. Melt the butter and syrup in a large pan on a low heat and when melted add the oats, salt and chopped dates and mix well. 3. Spoon the mixture out into the brownie tin and even out with a fork. Bake for 10-15 minutes until golden brown 4. Leave to cool and then cut into slices
Breakfast option: Crumble several flapjacks into a bowl and serve like granola with berries, nuts, seeds, dried coconut and a plant based yogurt.
