This Week's Food Focus is Peas

Snow Peas, Sugar/Snap and Garden Peas are all part of the Pisum genus. They are eaten at various stages of maturity. The entire pod of the Snow Pea is eaten whilst it is still flat and the peas are only just starting to form. The Sugar/Snap Pea is eaten when the cylindrical pod is crisp and the peas are not quite completely developed. Both types of pea are known as Mange Tout, which means "eat all" in French. The pod of the Garden Pea is discarded as it is too tough to eat and the peas inside are eaten.

Pea plants are very useful in the garden as they fix nitrogen in the soil making it available to some plants. Even when the plant dies in situ the remaining nitrogen is returned into the soil and makes a great fertilizer for other plants.
Peas are high in protein and fibre and an excellent source of vitamin C. They provide good levels of vitamin K, B1 (Thiamine) and manganese, as well as other minerals and vitamins.
