This Week's Food Focus - Garlic

Not only does garlic ward away vampires (or so the stories say) but it has a number of excellent health benefits, including antibiotic qualities, its ability to prevent blood clots, regulate blood sugar, lower blood pressure and more.

The way in which garlic is prepared for cooking determines the depth of flavour that will be imparted into the dish. For example, sliced garlic gives the mildest flavour whilst crushed garlic releases the most alliin and allinase which combine to form allicin, a volatile compound that is responsible for garlic's taste and smell.
