Until recently the only recipe I had for this amazing vegetable was Cauliflower Cheese, a firm favourite in our house as a child and the ultimate comfort food.
Now however there are a plethora of recipes out there from cauliflower pizza, cauliflower alfredo, cauliflower tortilla, cauliflower rice, cauliflower curries to buffalo cauliflower bites, tricking the most devoted of carnivore!
Nutritionally cauliflower has fairly high levels of vitamin C and boasts potent anti-cancer benefits. To preserve these beneficial compounds it is best eaten raw. If you do want to cook it avoid boiling it to death! "Boiling reduces the levels of cauliflower compounds, with losses of 20–30% after five minutes, 40–50% after ten minutes, and 75% after thirty minutes.[21] However, other preparation methods, such as steaming, microwaving, and stir frying, have no significant effect on the compounds."
