Oil Free Roasted Chickpeas

Roasted chickpeas make a delicious and healthy snack, or add a great taste and crunch to salads or Buddha bowls.
This recipe is oil free as the name suggests!
Makes 400g of roasted chickpeas
Preparation time: 5 minutes
Cooking time: 45-60 minutes
Ingredients:
Chickpeas pre-cooked or tinned
1/2 tsp of salt per 400g of chickpeas
2-3 tsp of Waitrose Cooks' Ingredients Dukkah seasoning*
*If you don't have access to the Dukkah seasoning you could try any of the following:
Cajun seasoning
1/2 tsp of paprika and 1/2 tsp of garlic powder
Curry powder or chilli powder
1. Preheat the oven to 200°C/400°C
2. Rinse and pat dry the chickpeas (but leave slightly damp)
3. Add the chickpeas, salt and seasoning to a medium-sized bowl and mix until the chickpeas are coated with the seasoning
4. Cook for 45-60 minutes, but check and shake the chickpeas after 20 minutes to ensure they are evenly cooked and do not burn
5. Serve immediately as a snack, add to a salad to bulk it up or allow to cool and store in an airtight container until ready to use. Quite honestly they are too delicious to save!
