Oil Free Lemon and Poppy seed Dressing

There is currently a lot of debate amongst Nutritionists about whether or not we should be eating oil. We're not here to dictate to you what is best but to provide you with alternatives to traditional dressings so that if you do want to reduce or eliminate oil from your diet you can.

Now for the recipe which is bursting with flavour:



Preparation time: 2 minutes

Makes under a cup of dressing


Ingredients:

½ a cup of fresh lemon juice 1 clove garlic, chopped 1cm knob of ginger, peeled and chopped 1.5 tbsp of honey/maple syrup/date syrup 1 tbsp of dijon mustard ¼ tsp of salt (or more to taste) Freshly ground black pepper 6 tbsp of water (or more if needed) 1 tbsp of poppy seeds


1. Blend all the ingredients except for the poppy seeds until smooth in a food processor or blender. 2. Season according to taste. Add more water if necessary. Add poppy seeds.
