Basil and mint dressing

This is perfect for dressing all manner of salads, especially those with a spring theme, loaded with peas and fennel.
To make the dressing you'll need:
A stick blender A wide necked jar/receptacle
Ingredients:
A handful of basil leaves A handful of mint leaves 1 garlic clove, peeled Juice and zest of half a lemon 1 tbsp of runny honey/maple syrup/agave syrup 1/4 cup of extra virgin olive oil Salt and pepper to taste
1. Put all the ingredients in the jam jar and blend using the stick blender.
Alternatively use a food processor/worktop blender.
