Wholemeal Mixed Seed and Nut Loaf

Whenever I am making bread and I happen to be back in the U.K. rather than France, I always use Dove Farm flour to make bread. Dove Farm produce organic and heritage flours as well as a range of naturally gluten free flours. They have accreditations from The Soil Association, Vegan Society, Kosher and Coeliac UK. You can find Dove Farm flours in most independent health food stores and supermarkets in the U.K. This particular bread recipe is by Dove Farm and it’s easy peasy.
Cooking time: 40 - 45 minutes
For this recipe you will need:
1kg/2lb loaf tin A large roasting tin
Ingredients: 500g Doves Farm Organic Strong Wholemeal Bread Flour 1 tsp Doves Farm Quick Yeast 1 tsp sugar 1 tsp salt 350ml tepid water 1 tbsp oil 150g sunflower, sesame, poppy or pumpkin seeds or any kind of nuts
1. Put the flour, yeast, sugar and salt into a bowl and blend them together. 2. Stir the water into the bowl and when everything looks craggy and lumpy, mix in the oil. 3. Use your hands to gather everything together into a ball of dough. 4. Knead the dough for 100 presses, in the bowl or on a work surface. 5. Cover the dough bowl with oiled cling film and leave it in a warm place for the dough to double in size, which will take about an hour. 6. Knead the dough for another 100 presses then incorporate the seeds and nuts until well combined. 7. Shape the dough and put it into your prepared tin. 8. Loosely cover the tin with the oiled cling film and leave it to rise in a warm place for 40 minutes. 9. Pre-heat the oven to 220˚C/Fan 200˚C/425˚F/ Gas 7 10. Just prior to putting the loaf in the oven place the large roasting tin on the bottom shelf of oven, half fill with boiling water from the kettle. This will create a steamy environment which will make the crust on your loaf crunchier. 11. Place the loaf in the oven straight away. Bake for 40-45 minutes. It's done when the bottom sounds hollow when tapped. Leave to cook on a wire rack.
Serve with organic butter and a nourishing bowl of homemade soup.
