This Week's Food Focus: Sweet Potato

Who would have thought that the sweet potato belonged to the Convolvulaceae family, (aka the bindweed family or Morning Glory family) with their funnel shaped flowers and climbing vines?Who would have thought that the sweet potato belonged to the Convolvulaceae family, (aka the bindweed family or Morning Glory family) with their funnel shaped flowers and climbing vines?

Native to the American Tropics, sweet potatoes are rich in complex carbohydrates, beta carotene and fibre making them a healthy addition to one's diet.

Although the taste is very different, sweet potatoes provide a healthy alternative to a regular potato, especially when serving as fries or baked potatoes.

This infographic provides a really good comparison of the two vegetables and debunks the myths:

I love the versatility of sweet potatoes. You can bake them as you would regular potatoes and load with a whole range of fillings, or cut them into wedges or fries and bake them till they're crispy on the outside and soft inside. You can even use them in dessert recipes!

We're looking forward to sharing several sweet potato recipes with you this week including a toddler friendly meal, a perfect accompaniment to a big salad, a truly divine side dish and a guilt free sweet treat!
