Sweet Potato and Chocolate Brownie Squares

It's Friday and today is Sweet Treat Day!


Many of you will be surprised that this treat contains sweet potato, is gluten free, dairy free, has no added sugar, is plant based, vegan and very quick to make.

This is a healthy snack for adults and children alike. My toddler loves them!


Sweet Potato and Chocolate Brownie Squares


You will need a 13 x 18cm (5x7 inch) brownie tin

Preparation time: 5 minutes

Cooking time: 35-40 minutes


Ingredients:


3/4 of a cup of sweet potato (steamed and mashed)

20 Medjool dates pitted

1 tbsp of cold coffee

1/2 a cup of ground oats (gluten free)

1/2 a cup of cocoa powder

1 teaspoon of vanilla extract

1 cup of water


1. Preheat the oven to 180°C/350°F/Gas mark 4

2. Line a brownie tin with parchment paper and set aside

3. In a food processor add the pitted dates and cup of water. Blend till smooth

4. Add the remaining ingredients and blend till it becomes the consistency of brownie batter

5. Using a spatula, scrape the mixture into the brownie tin and level out with a fork

6. Bake in the oven for 35-40 minutes or until a skewer comes out clean

7. Transfer to a wire cooling rack and leave until cool before cutting into squares


These brownie squares can be served with a glass of almond milk (or other plant based milk).
