Summer Salad

It’s crazy hot here in Provence...and only mad dogs and Englishmen venture out in the midday sun. Speaking of English men, the hubby is cycling up Mount Ventoux whilst I am in the shade on the terrace and the dogs are panting at my feet.

Lunch is always going to be salad, quick and easy to assemble, nothing to get into a sweat over. And here if you move too much or at all, there is a going to be a deluge of perspiration!

Get some lovely sun dried tomatoes to serve along side your salad. Lovely lettuce leaves, lollo rosso, rocket and watercress and spinach leaves are tasty. Refreshing cucumber, colourful radishes, new potatoes boiled in their skins and a wonderful dressing of extra virgin olive oil, lemon juice and white balsamic, a sprinkle of sea salt and freshly ground black pepper and you’re done. For protein add a few boiled eggs, or flash fried halloumi cheese. On the side some hummus and goats cheese sprinkled with parsley. Good to go!
