Steamed Asparagus with Vegan Hollandaise Sauce

Sometimes the most simple meals are the best. There is nothing better than steamed asparagus with or without a sauce. As I still had some aquafaba in the fridge I decided to try my hand at making vegan hollandaise sauce. It was very easy and marries well with steamed asparagus.



Serves: 4 as a starter Preparation time: 2 minutes Cooking time: 5-7 minutes


Ingredients: A bunch of fresh asparagus 3 tbsp of lemon juice, freshly squeezed 1 tsp of lemon zest 1/3 cup of aquafaba (juice from tin of chickpeas or other legumes) 2 tsp of dijon mustard 1/2 cup of extra virgin olive oil


1. Snap off the woody ends of the asparagus and discard. Wash the asparagus and steam for around 5 minutes until tender. Set aside 2. In the meantime, prepare the hollandaise sauce. Whisk the aquafaba until it forms peaks (as with egg whites). 3. Gently fold in the mustard, lemon juice and zest. 4. Pour in the olive oil and whisk at the same time until an emulsion forms (a few minutes). 5. Put the sauce in the fridge to thicken a bit before serving with the asparagus. Alternatively serve immediately with the warm asparagus. I did and the sauce was still thick and creamy, without feeling too rich.
