Potato and Herb Spring Salad

This wonderful salad uses delicious new potatoes, spring onions and lots of herbs. It's a great dish to serve warm with a main course or with other salads.



Serves: 2-4 Preparation time: 5 minutes Cooking time: 10-15 minutes


Ingredients: 500g of new potatoes A handful of herbs, chopped (parsley, mint, chives) 2 spring onions, chopped (including green part) 2 tbsp of olive oil 1 tbsp of wholegrain mustard 1 tbsp of red wine vinegar

Salt and pepper


1. Boil the potatoes for about 10 minutes. With a folk check to see if they're cooked. If not, cook for another 5 minutes or so until tender. 2. In the meantime, put the herbs and spring onions in the bowl you'll be serving the salad in. 3. In a small jam jar, add the vinegar, mustard and oil. Close the lid tightly and shake until an emulsion is formed. Pour the dressing into the salad bowl. 4. Drain the potatoes and add them to the salad bowl. Toss well so that they're coated in the dressing and herbs. Season according to taste.

Serve warm or cold.
