Oven Baked Onion Bhajis

These gluten free, vegan snacks are delicious! They're a healthier version of the traditionally deep fried Indian snack.

I reduced baking time by increasing the cooking time of the onions in the frying time, with no ill effects. The bhajis were still crispy on the outside and the onion soft on the inside.



Makes: 8 bhajis Preparation time: 10 minutes Cooking time: 40 minutes

Ingredients for the bhajis:

5 small onions, sliced 5mm thick 5 tablespoons chickpea flour 1/2 tsp of ground cumin 1/2 tsp of ground coriander 1 tbsp of tomato puree 1 pinch of salt Water Extra virgin olive oil

Ingredients for the spice mix: 1/2 tsp of ground turmeric 1/2 tsp of ground coriander 1/4 tsp of ground cumin 1/4 tsp of ground ginger 1/4 tsp of chilli powder

Method:

1. Preheat the oven to 200°C / Gas Mark 6. Line a large baking tray with baking parchment.

2. Gently cook the onions in a frying pan with a little oil for about 10 minutes, until they turn soft and translucent.


3. Add in the chilli powder and mix. Add the turmeric, cumin, ginger, coriander and stir well. Remove from the heat. 4. In a medium bowl add the chickpea flour, salt, coriander, cumin and mix well. In another bowl add the onions and tomato puree and mix. 5. Combine the flour mixture with the onions and mix well. Add a little water until you get the correct consistency; it should be wet and easy to stir, but not sloppy. 6. Oil the prepared baking tray liberally and place 2 tablespoons of the onion mix onto the tray per bhaji. Press down slightly with the back of the spoon to shape.


7. Bake on the middle shelf of the oven for 20-25 minutes or until golden brown. Serve hot.
