Buddha Bowl Quick Lunch

Today's quick lunch is a rainbow of colours and took several minutes to assemble. This Buddha bowl consists of an assortment of ingredients leftover from the night before; (roasted sweet potato, green beans) and roasted chickpeas that can be made in bulk and used as and when you want them.


So versatile, healthy and delicious. Dress or eat without dressing, as you prefer.
