Broccoli and Cheddar Cheese Soup


The broccoli in this soup provides large levels of vitamins C and K along with some B vitamins and minerals. As with other cruciferous vegetables it also has powerful anti-cancer properties. Cheddar cheese is one of my favourite cheeses for cooking with due to its strong but not overbearing flavour. Luckily I am able to buy it in our nearest large supermarket, otherwise I don't know what I would do! The broccoli and cheddar flavours work well together. Testament to this is the fact my youngest son had three servings, which, given that he's so difficult with food is nothing short of a miracle!



Serves: 4

Preparation time: 5 minutes Cooking time: 35-40 minutes


Ingredients:

4 tbsp of unsalted butter/coconut oil 1 small onion, chopped small 1 garlic clove, minced 1/4 cup all-purpose flour 1 cup semi-skimmed milk/plant based milk 4 cups low-sodium vegetable stock 1 bay leaf salt and freshly ground pepper 4 cups broccoli florets and stems, chopped small 1 large carrot chopped (1 cup) 2.5 cups of coarsely grated cheddar cheese


1. Melt the butter/coconut oil in a large, heavy bottom pan over a medium heat. Add the onion and garlic and cook for about 3-5 minutes until tender. 2. Add the vegetable stock, bay leaf, salt and pepper and bring to a simmer. Reduce the heat to medium-low and cook without a lid for about 10 minutes until slightly thickened. 3. Add the broccoli and carrot to the stock mixture and simmer for 15 to 20 minutes until tender. Discard the bay leaf.

Note: Most traditional broccoli and cheddar cheese soup recipes will now direct you to blend the soup then add the cheese and milk but I added the cheese and milk to the soup while it was still hot and blended, with no ill effects!

4. Add the milk and grated cheese and blend until smooth, or blend with an immersion blender or countertop one and then once blended add the cheese and milk and heat gently until the cheese is melted.

This soup is very filling so can simply be served with a hunk of bread and a green salad.
